Crockpot Creamy Salsa Chicken

I recently was experimenting for an easy cheap dinner and I came up with this. I apologize for the pictures, but I haven’t found the talent to take nice pictures of food. Believe me though, this recipe turned out so good and was different from our routine!

Pace Salsa has introduced several new salsa flavors aside from your standard mild, medium, and hot. These great new flavors include:

  • Black Bean & Roasted Corn
  • Pineapple Mango Chipotle
  • Triple Pepper
  • Tequila Lime
  • Mexican Four Cheese Salsa con Queso
  • Salsa Verde
  • Pico De Gallo

You know, salsa can go so much further than just chips and salsa. You have to get creative! It can be a great addition to make a blah meal a fancy meal. As we cut back to save money, eating out is becoming less frequent. What a great way to get a great restaurant meal at home without spending much money!

I took a chance on the Pineapple Mango Chipotle Salsa. It just sounded so exotic! This salsa is definitely not the ordinary! It added a great flavor to the chicken!


Ok, so let’s go over the recipe. It’s really super simple:

Chicken
1 cup Heavy Cream
1 jar Salsa
Rice

(if you find this isn’t enough sauce, you can increase the sauce by increasing equally the salsa and heavy cream)

The chicken you use can be any cut. Whether it’s leg pieces or boneless breast, it’s really your choice. I used the leg quarters I got a little while back for $0.59 a pound. If you use parts with bones, cooking in the crockpot will make the bones easy to remove.If you don’t have Heavy Cream on hand, you can use this recipe to make your own. It makes 1 cup:

3/4 cup milk
1/3 cup butter or margarine, melted and cooled

Add your cream and salsa to the crockpot and mix (If you mix in the crockpot, that eliminates one bowl you have to clean) Lay your chicken pieces on top then spoon the sauce over all of the chicken. Leave to cook on low for 8 hours.
This recipe is great because I can set it to start cooking and then it will be ready when I get home from work! All you have to do after it’s done cooking is just steam some white rice to serve with the chicken. You could also add some steamed veggies as well!


This is very yummy, cheap, time efficient, and filling! This is sure to become a staple in your house! Remember you can use any flavor of salsa in this recipe so experiment with the new Pace Salsa flavors and find your meal!
