Homemade Pancake Syrup
So I’m sure you just read the title and think I’m some kind of maple syrup harvester. Sorry to disappoint. Sadly, there’s only so many hours in a day. One thing that’s sure NOT to disappoint is the homemade pancake syrup I made the other day.
DH is very spontaneous when it comes to cooking. He doesn’t make sure all the ingredients are in the house prior to starting a project. The other day was no different. DS wanted some pancakes and that’s DH’s specialty. So in the kitchen DH was throwing together the pancakes only to call to me and ask “Hey, do we have anymore pancake syrup other than this little bit?” My response “Did you look?” knowing there wasn’t any as I walked into the kitchen. “No….” he responded. “Of course you didn’t” I mumbled under my breath. I love him to death….but dang it helps to think past the end of your nose sometimes. DH responded “But I need some”….like I was going to be able to pull pancake syrup out of thin air…..or could I?
I remembered that I’d seen a recipe in this great book called Not Just Beans – 50 Years of Frugal Family Favorites. (This is a super great book and recommend it highly) I swished through the pages to see what the recipe consisted of to see if I could make it. Lucky for them, I did. So off I went making the syrup.
1 cup brown sugar, packed
1/2 cup of water
1/4 tsp of maple flavoring (vanilla may be substituted)Stir ingredients together. Bring to a boil. Simmer for 2-3 minutes, and cool. Pour into serving container. Makes 1 cup.
