Picnics Made Yummy with Libby’s Fruit and Vegetables Review and Giveaway
Now that summer is here, it’s time to get outdoors! Picnics offer a great opportunity to spend quality time with the family and get that huge gulp of fresh air! Oh! Our family is quite the fan of Libby’s Fruits and Vegetables. I can’t lie, our pantry is filled with cans labeled “Libby’s”. As a working mom, I have to say that keeping fresh produce in our house is quite difficult. I want to make sure my family gets in their fruits and veggies, but I always find that they go bad before I can use them. Who likes wasting food!? That’s why I rely on Libby’s Fruits and Vegetables! They’re affordable, quick to prepare, don’t go bad, and I love how fresh they taste! So including Libby’s Fruits and Vegetables on your picnic is a no-brainer!
Here is a great recipe to take along on your picnic courtesy of Libby’s Fruits and Vegetables:
Smoky Carrot Hummus Sandwich Spread
Makes 2 ¼ cups
Get out of your mayo and mustard rut with this flavorful and healthy sandwich topper.
Ingredients:
1 (15 ounce) cans Libby’s Sliced Carrots drained and rinsed
1 (15 ounce) can Libby’s Organic Garbanzo Beans, drained and rinsed
2 tablespoons lemon juice (about 1 small lemon)
2 garlic cloves
1 teaspoon smoked paprika (or curry powder)
½ teaspoon cumin
1/8 teaspoon black pepper
¼ cup extra virgin olive oil
Directions:
In a food processor, blend together carrots, garbanzo beans, lemon juice, garlic cloves, paprika, cumin and pepper. While processor is running, slowly pour in olive oil. Process until smooth.
To make a sandwich, spread 2 tablespoons of carrot hummus on one slice of whole grain bread of your choice. Top with avocado, tomato, turkey or your favorite sandwich fillings. Top with another piece of whole grain bread.
Keep remaining spread in sealed container for up to 10 days in refrigerator.
Super easy to make, super easy to transport in your picnic basket, and of course, since it’s made with Libby’s products, it’s sure to be a pleaser!
