As a working mom, dinner is always a tricky subject.  I usually don’t have much time for prep when I get home from work.  That’s why I love soup!   You can make it as simple or as complex as you’d like and you can make it healthy as well.  Soups are a great way for me to sneak in veggies for Mr B.  Actually, I think you could sneak in just about every food group in a soup.  Also, if I’m running late, soup is something I can trust my husband with.  It’s win-win!  Having that said, I was stoked to be able to review the Xtrema Cookware 4 Quart Covered Soup Pot!

You are going to love Xtrema Cookware.  Why? you ask   It’s durable, practical, and versatile!  That’s right,  it’s easy to clean, you can’t mess it up with scratches, easy to use, cooks your food exceptionally well, and it’s 100% green!  Yes sir,  Xtrema Cookware packs quite the punch.

As I mentioned before, I was able to review the Xtrema Cookware 4 Quart Covered Soup Pot.  This uniquely shaped pot  is 100% ceramic which allows it to be both dishwasher and microwave safe.   I love the handles and how easy it goes from the stove to the fridge and then back to the microwave or stove for leftovers!  Speaking of the microwave,  you’ll love the design allowing far-infrared heat to cook the soup throughout.  That means when you go from the fridge to the microwave or stove, your soup will cook throughout without that blasted cold spot in the center!  Not only will you NOT have that cold spot, but the soup pot is designed (magic ceramic) to keep the heat in longer.  So that means if I’m late, I can still have a hot bowl of soup without having to nuke it!

Yes, I did mention Xtrema Cookware being 100% green.  Xtrema Cookware is friendly to the environment!  From the earthy-friendly production practices and inorganic natural minerals used in construction to the safe ceramic glaze alternative to harmful PFOA coatings of most other popular non-stick cookware, Xtrema Cookware is eco-friendly.   Can I get a “woot woot?!”

So, what did I make during my review?  Good ol’ beef stew:

Ingredients

  • 2 pounds cubed beef stew meat
  • 3 tablespoons vegetable oil
  • 4 cups beef stock
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 3 large potatoes, peeled and cubed
  • 4 carrots, cut into 1 inch pieces
  • 4 stalks celery, cut into 1 inch pieces
  • 1 large onion, chopped
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water
 Directions
  1. Throw everything in the pot except for cornstarch. Bring to a boil, then reduce heat, cover and simmer 1 hour.
  2. Dissolve cornstarch in 2 teaspoons cold water and stir into stew. Cover and simmer 1 hour more.

The stew came out yummy and I had enough for leftovers.  Seriously, I can’t get over the convenience of being able to take it to the fridge and back out!

    My favorite soup to make is baked potato soup! I simmer 5lbs of potatoes and 2 onions for about 4 hours, use an immersion blender to blend in a pack of cream cheese, then top with crumbled bacon and shredded cheddar!

    I like greek solvaki. It includes salad, red onion, feta cheese, ( chicken, lamb, or beef). Cook meat however you like it. Then add to salad. Add greek dressing and feta cheese. Thats it.

    I make my own Italian Sausage soup.

    Brown 1 package of hot italian sausage with 1 onion. Add 2 cups of broth, one can of diced tomatoes and one package of frozen mixed italian veggies. Simmer for 2 hours and serve with sour cream and homemade bread!

    Just simmer together

    2 cans of crushed tomato
    2 lbs browned ground beef
    a can of red kidney beans
    chili powder to taste

    I make a lot of chicken noodle soup around here. We call it “chicken shit” to be exact. I just boil a whole chicken, debone it, throw it all back in the pot with the broth and throw whatever vegetables are sitting in the fridge, plus plenty of celery and okra. Throw my noodles in at the end and wah-lah … dinner for the next week :)

    My favorite is Cream of broccoli
    2 bunches of broccoli
    4 cups of Milk
    4 cups of chickens broth
    4tablespoons of butter
    flour to thicken
    2 cups of light cream
    2 cups of heavy cream
    cook broccoli then put all together cook lightly blend broccoli in with a hand blender

    Ok, even I was skeptical to try this Lettuce soup. I had a bunch of romaine lettuce in the fridge that I knew I wasn’t going to use in time, so I found this recipe and decided to give it a try.     Stuffed Cabbage Soup
    1 lb ground meat
    1 med head of cabbage
    1 large can of tomato juice ( use about half)
    1 large can of diced tomatoes
    1 onion diced
    2 cloves of garlic diced or 1 tsp of garlic powder
    1/2 to 1 c of uncooked rice ( to your tastes)
    1 package of Lipton beefy onion soup mix
    2 c of water

    Brown ground meat, onion garlic. Then chop the cabbage to whatever size pieces you like, add everything to the crock pot cook for 8 hours on high or 4 on low. Serve with a dollop of sour cream on top.

    Easiest Chili ever! Owens breakfast sausage, crumbled, 1 can diced stewed tomatoes, 1 can red kidney beans, drained and rinsed, 1/2 diced medium onion, 1 tsp of cumin, 1 tbls chili power and 1 can of water. (I don’t add salt to anything!)

    I make a tomato-veggie soup:
    *1 bottle tomato or vegetable juice (V8 or store brand)
    *1 large can diced tomatoes
    *chopped onion and garlic to taste (I use a lot)wilted just a little in olive oil
    *LOTS of frozen veggies (broccoli, cauliflower, beans, carrots, squash–any and all, whatever you like)
    *pepper to taste

    Just simmer until done like you like the veggies. We call it “Super Soup,” because everything in it is a super food. Have a fruit smoothie for dessert, and you’ve had a super nutrient-dense meal. Delicious!

    I love chicken and dumpling soup..Its super easy to make

    Boil chicken theighs with seasoning take out set aside add dumplings (i use the frozen) to the water boil until done debone chicken add that back add a few cans of your favorite vegis add a cup or so of chicken broth and you are good to go ..Simple and super yummy..

    You can do it with all fresh vegis also.

    Guatemalan Chicken Soup

    INGREDIENTS

    1.5 lbs. boneless, skinless chicken thighs 1 c. diced carrot (about 2-3 carrots, peeled) 1 c. diced green bell pepper (about 1/2 pepper, cored and seeded) 1 c. diced onion (about 1/2 med/lg onion) 1 15-oz. can no-salt-added whole tomatoes, drained and diced 1/3 c. diced celery (about 3 small inner ribs, with leaves) 5 cloves garlic, sliced thinly 3 T. minced fresh ginger (1 thumb-sized piece, peeled) 8 c. water 8 t. very-low-sodium or sodium-free chicken bouillon granules 2 T. lemon or lime juice 2 T. white or rice wine vinegar 3 bay leaves 1 t. ground cumin 1/2 t. freshly ground black pepper 1/2 t. ground coriander 1/2 t. dried oregano 1/2 t. ground paprika 1/8 t. ground nutmeg 4 c. cooked rice

    DIRECTIONS

    Saute the chicken thighs over medium-high heat, about 5 minutes per side. Remove from heat, cool to touch, then dice. Set aside.

    Combine remaining ingredients EXCEPT chicken, ginger, celery and rice in a large stock pot. Bring to a boil over high heat. Once boiling, reduce heat to low. Add chicken, ginger and celery. Cover pot and simmer for 45 minutes.

    To serve, spoon 1/2 cup cooked rice into each bowl and ladle soup over.

  41. I’d have to say good old chicken noodle soup! Just some chicken and chicken stock, noodles, carrots and celery, peas, bay leaves, salt, pepper, and I like to add a bit of lemon pepper! So easy and soooo yummy!

    1 Large jar + 1 can Great Northern Beans
    1 Package of Diced Ham
    1/2 Bottle Barbecue Sauce
    1/2 Cup Brown Sugar

    Put it all in the crock pot and cook on low all day!
